The world's best vanilla crescents

Now that it is getting cold and uncomfortable outside and the Advent season is just around the corner, there is nothing to stop us from starting Start baking the most delicious cookies. 

Our absolute favorite cookies are vanilla crescents. We have the world's best recipe for them. It comes from the grandmother of a school friend who ran a bakery and confectionery shop in the village until she was 87. We would like to share her secret with you today.

The dough has only four ingredients:

560 grams of flour
400 grams cold butter/margarine
160 grams of sugar and
200 grams of ground almonds

Finally, we roll the croissants in

100 grams of sugar and
100 grams of homemade or four packets of vanilla sugar

To get started, we cut the cold butter/health margarine into cubes and put them in a bowl. Then we sift the flour. Now add the ground almonds and the sugar. Then we knead the whole thing thoroughly with our hands. This is of course the task that the children like best. 

After kneading, wrap the dough in cling film and place it in the fridge for at least an hour.

Then we take small pieces of dough and shape them into the typical croissant shape: To do this, we roll a ball, press it gently flat and then begin to form a roll with tapered ends. We particularly like it when the fine corners are already a little brown, which creates a fantastic contrast to the thicker, light dough. It is important not to knead the dough for too long and to work with loose hands. This brings out the crumbliness best.

Now the finished croissants are placed on a baking tray lined with baking paper.
Now bake the cookies for 15 minutes in the oven preheated to 175 degrees.

After baking, we let the cookies cool briefly until they no longer break when touched.
But they should still be warm when rolled on both sides in the vanilla sugar mixture.
